Why can you never get angry at a yam? Caus’ it’s such a sweet potato!!
All hail the mighty sweet potato. Highly nutritious and a great source of fiber, vitamins and minerals which promote healthy gut flora. They are also incredibly high in beta-carotene, which supports healthy vision.
Sweet potatoes are also rich in antioxidants which may have cancer fighting properties. So, smash a sweet potato today. On the farm we store them in a sunny place for a couple of days to increase their sweetness before use. They are such a versatile tuber.
Roast them whole in the oven, scrape out, and season for mash. Par steam 1cm thick rounds, then cool to use them later in the toaster, like a GF crumpet, almost, sorta... big smear of avocado butter, creamed honey, and toasted hemp seeds YUM!
And if they start sprouting, because you have too many (which should never be a thing!) bury it in a pot to grow your own productive, yet beautiful hanging plant.
Sprinkle them on top of salads and meats, eat as a snack, and of course on top of Pumpkin Soup with a dollop of coconut or sour cream !
