Leftover Dilemmas ?

We all have the best of intentions when we shop for our food, and the plan is never for it to end up in the bin. But, at the end of the week are you trying to figure out what to do with food that is on the verge of spoiling? (ring especially true with fruit?). Well with a touch of creativity and forethought, you can make everything from fruit water to delicious pies with your leftovers, so there is no reason for it to end up in the bin ever again 🙆🏽‍♀️

Try some of these quick tips for your Kin Kin Fresh fruity bits….

Refreshing fruit cubes: place chopped up over ripe fruit in blender with mint leaves, a squeeze of lemon juice and a couple of tsp of brown sugar or honey. Blitz and pour into ice cubes and freeze to set. Use in pitchers of water to flavour, or blend with your fave alcohol for fruity cocktail hour 🍸.

Candied orange rind: make a simple sugar syrup ( you can use stevia or agave if you prefer), add julienned orange peel and simmer until translucent. (40 min) Once softened place on a cooling rack to dry at room temperature. Dust with castor sugar to store. Mandarins are great for this as well 🍊

Fruit compote crumble: Macerate leftover diced fruit in castor sugar overnight. Place a few scoops in a cup. Preheat oven to 180C. (recipe is for 6 cups of crumble) 1 cup plain flour, ½ cup packed brown sugar, ½ cup rolled oats, 100 g salted butter, ½ cup chopped nuts of your choice. Rub butter into flour/sugar/nut mix until a sandy, breadcrumb texture is achieved. Spoon over cups containing macerated fruit and bake in the oven until golden brown. (20-25 minutes) Dust with icing sugar & a scoop of ice cream to finish.🍏🍐🥧
